Cantaloupe Bread

Ingredients
Wet
| 3   | | eggs | |
| 1   | C. | oil | |
| 2   | C. | sugar | |
| 3   | tsp. | vanilla | |
| 1   | | cantaloupe | pureed (about 2 cups) |
Dry
| 3   | C. | flour | |
| 1   | tsp. | salt | |
| 1   | tsp. | baking soda | |
| 3/4   | tsp. | baking powder | |
| 2   | tsp. | cinnamon | |
| 1/2   | tsp. | ginger | |
Optional
Instructions
- Beat first 5 ingredients together.
- Add all other ingredients except nuts.
- Mix well.
- Add nuts. (if using)
- Bake in greased pans for 1 hour (for large loaves) at 350°.
- 3 small loaf pans = 45 minutes
- 2 standard loaf pans = 1 hour
Notes
- Servings: 2 standard loaves or 3 small loaves (12 total cups)
- small = 8.0" x 4.0" x 2.5" = 4 cups
- standard = 8.5" x 4.5" x 2.5" = 6 cups
